Beef salad with focaccia

DSC00657-2Is anyone else having a hard time eating a heavy and warm dinner in the warmth nowadays? This salad is so incredibly delicious, and fits perfectly as a light dinner in warm weather. Or any other day to be honest. Here’s the recipe!

You’ll need:
Beef steak (of your choice)
Salad mix (of your choice)
Strawberries
Mango
Cucumber
Cherry tomatoes
Spring onion
Feta cheese

Dressing:
10 table spoons fresh lime juice
3 table spoons fish sauce
2 table spoons sugar
1 table spoon chili powder
Sesame seeds (dry roasted)

Focaccia:
50 grams yeast
6 dl water
1 teaspoon sugar
1 teaspoon salt
2 dl olive oil
1 kilo flour
Salt flakes
Rosemary
Sun-dried tomatoes
Olives

This is how you do it:
Focaccia: Mix the yeast in lukewarm water. Add sugar, oil and flour. Knead the dough well, it should be a bit loose. Set the dough to raise until the size is doubled. Knead the sun-dried tomatoes and olives in the dough and have it in a ovenproof pan. Spread salt flakes and rosemary at the top and let it raise for 30 more minutes. Dripple some olive oil at the top and have it in the oven at 200 degrees (celsius) for about 30 minutes.
Dressing: Simply mix all the ingredients together.
Salad: Cut all the vegetables, fruit and berries. Mix it with the feta cheese and have it in a bowl. Season the steak with salt and pepper, and fry it in a pan on high heat with lots (!) of butter – about two minutes on each side.
